Collagen casing for sausages and hot dogs

Edible collagen sausage casing, intended for heat-treated meat products or long-lasting fermented (cold process). The casings are excellently permeable to smoke and water vapour, characterised by high elasticity and seamless machine processing on all common types of stuffing machines. The finished products have a tender bite and a natural appearance, and the casing can be consumed as part of the sausage.

Processing:

• do not soak the casings in advance
• stuff immediately after removing from the packaging
• products are smoked and steamed at a maximum temperature of 75 °C
• after heat treatment, we recommend cooling the products by showering with cold water
• cold smoking and drying can be done as needed
